First things first, let's just take a moment and talk about these. 'Seductive raw chocolate walnut fudge' from Oh She Glows.
Life. Changing. Made Sunday, all gone by Tuesday. Silky, melty, rich and just divine. We used brazil nuts rather than walnuts. The ingredients cost a small fortune but it is so so worth it. Andy made them and is already planning the next batch. Do yourselves a favour and make them, too.
Food heaven continued on Monday morning with a very welcome smoked salmon frittata.
Work has a nice chilled pace to it at the moment as it's not too busy in the office, and I can focus on getting stuff done without the phone ringing and emails flooding in. It's lovely! I managed to arrange a very last minute lunch and walk with Rach and catch up on the gossip since Friday night. There's always more! Mackerel salad was wolfed down in between my gasps.
After work Andy and I headed straight to Wimborne in Dorset. Traffic was a breeze and it turned out to be a nice evening after some torrential rain in the day. We arrived at our very cute hotel, the King's Head and grabbed some dinner there to line the tummies. I had a real craving for burrito and gave in. I inhaled it. Cheap and tasty, but it didn't really touch the sides!
Then we had a little walk around the town centre before making for the reception at Number 9 Restaurant, a gorgeous, rustic little place full of country flowers and candles. It was so pretty, and the bride looked fabulous. We felt a bit out of place at first as most people had been there all day and were already quite, erm, merry. But, we soon made up for it...
We ended up having a blast (and a bacon sandwich) and I woke up feeling very tired...! Yesterday was a blur of sugar and carbs in an effort to get myself through the day at work, but it was worth it.
I had kippers and a banana for breakfast at the hotel and a chicken wrap from Marks and Spencer for lunch plus some granola bars and biscuits. I was so wiped out when I got home I didn't make it to Real Military Fitness and crashed out instead. I did manage to rally myself later on and make this new (to me) Iowa Girl Eats recipe, Autumn salmon salad. Oh, it was lovely, fresh and crisp with the right balance of sweet and savoury. The we polished off the homemade fudge and I crawled in to bed.
I felt much better after a good night' sleep this morning and was loving this veggie-packed mackerel frittata. Back to healthy eating.
And lots of yummy, healthy fats in my salmon and avocado salad at lunch, plus a walk. I felt bloated all day, but serves me right!
Now I'm off for a walk and Friday I'm off to Stockholm for the weekend, so I won't be checking back in until next week. Have a great week and weekend!
