My Christmas cactus is in bloom again and never fails to cheer me up. Groundhog Day on breakfast I'm afraid, but managed to remember a pic was needed (halfway through it, mind!).
What is this strange concoction she loves, you may ask. Well, it's a Paleo version of porridge and it is very tasty. If you fancy a go, chop up a banana in a bowl, cover with 30g ground almonds and enough milk to just cover. Pop in the microwave on high for 2.5 minutes and top with fruit of your choice, and maybe some nut butter. Let me know what you think!
I was on a roll, because I remembered to snap lunch today, too! After a mid-morning apple I inhaled another Super Salmon Salad with frozen smoked salmon, spinach, beetroot, red pepper, tomato, cucumber, mange tout, carrot and celery doused in balsamic vinegar and olive oil. Skip to home time and I'm feeling very rough so just made a quick cup of miso soup* with sea vegetables and crunched on a carrot. I need vitamins!
*Disclaimer: I know miso is not Paleo. Neither is peanut butter. I like both. Being super strict wasn't working for me so I'm sneaking in some 'treats'. Why not!
